Butternut Squash, Cauliflower and Pea Soup

Warm and delicious soup perfect for Fall/Winter seasons. I never cook with measurements so all is estimated. Adjust as needed. Make it yours.
Chakra Infused Healing for: Root Chakra, Sacral Chakra and Throat Chakra
INGREDIENTS:
- 2 tbs coconut oil
- 1 large onion
- 1" ginger: chopped
- 4 cloves of garlic: chopped
- 3 cups butternut squash: cubed
- 1.5 cups of cauliflower: chopped
- 1 tsp ground cinnamon
- 1/4 tsp cumin
- 1/2 cardamon
- 1/5 tsp turmeric
- 1, 13.5 oz can of coconut milk:
- 2 cups (plus more) vegetable broth
- 1 cup of frozen peas
- salt and pepper
DIRECTIONS:
- Heat coconut oil in a dutch oven pot
- Add in onions and let them cook for 8 minutes.
- Add in salt and pepper, ginger and garlic.
- Lower the temperature medium low and let them become caramelized for ten-fifteen minutes.
- Add in butternut squash and cauliflower.
- Add in cinnamon, cardamon, cumin, turmeric and toss the veggies for our 4-5 minutes.
- Add in coconut milk and vegetable broth.
- Bring to high, lower to simmer for 15 minutes.
- Add in peas and cook for 5 more minutes.
- Adjust seasoning and enjoy!
